Does progression speed up?
Maybe I'm just dying too much but does the meta progression pick up at some point? It feels kinda silly having all these shops at the start of each run and all these weapons/attachments available only to be stuck with the dirk and 200 gold run after run.

Is there anyway to boost how much gold I'm getting from runs?

Edit: I honestly just gave myself gold to deck out 1 weapon and it got me a good run with enough weapons to actually get to experience the game and get some variety finally.

You can sell cooked food items for some dough, and if you have guns you don't vibe with you can sell them too. One easy way to get gold is by selling oils, most of them are trash anyway. Tbh there isn't really "meta progression" other than the storage you unlock. The moment you can kit out a gun you'll be able to blaze through the levels.
The Luck stat seems to increase the number of chests lying around in a run, so if you find the santa hat or elf shoes those boost luck. Otherwise the only real permanent progression is the storage unlocks. Early game or if you find yourself dying a lot you should focus on crafting mushroom and other foods and selling them, stashing any gold or good items you'll want later into storage and building your wealth returning after charging the amulet. Then once you've accumulated a comfortable amount you can start taking riskier moves and bringing more items into a run.

Another way to boost gold is to look at the recipes people have posted in Guides if you don't mind getting information outside of your own gameplay. Crafting is very lucrative early game unless you get lucky with rare drops.
