Is there a way to reset your save data?

I'm trying to play through the game without eating the fruit; I didn't realize it would activate an easy mode for my game.

There is. I found it by accident so maybe it's something you're not meant to know about until later in the game.
If you still want to know: When you see one of those black statues with 4 eyes, place a staircase on the tile below theirs and go down the staircase. A short cutscene will trigger and you'll be back in the very beginning.

EDIT: i don't know how far you are into the game, but what you call an "easy" mode feels like the intended way to do a first playthrough. I don't encourage you to start the game from scratch just because you feel like you activated baby mode or something, you very much didn't (in my opinion).

If you want to fully reset your save, you can do so without game mechanics by disabling steam cloud and going to the following path:

C:\Users\username\AppData\Local\void_stranger

and deleting/moving/renaming save.vs and steam_autocloud.vdf

Your settings/bindings will remain untouched.
