(Mine was C:\Program Files (x86)\Steam\SteamApps\common\Vindictus\en-US)
Then run Vindictus.exe in the folder and it launches the game without steam asking you to login.
After you go to the initial menu in game (Start Game, Options, Quit), click Start Game, it asks you to input your account name and password.
Here you can freely input any account name and login.
Is this something that only needs to be done once, or would I need to run the game this way every time? And will the Steam overlay still work if I run the game this way?
You will have to make a ticket, explain why you need to change the email, and possibly verify identification, (they will also probally make you make a new password as well) but with a little patience, this is how you get log in changed on the Steam log in.

Valve didn't make the game. They were paid to put it on the store.
Valve made the Steam login interface, though, and they're the ones that made it so you can't change the login email. If I download and install the regular version, it does not ahve that limitation.
