Can I only choose from prenamed cookie cutter Characters? I go to the "create character" screen, choose on a character slot, and it sends me back to the "premade" characters.

not quite, after the prologue, you can start customising them

The characters are actually classes, even though they have names. (Beats "2 sword & spear guy" class) Think of it as a combat style; or maybe who trained you. You are not actually that person.

The prolouge you play thru it with a character where you can't see thier face and are known as the "rookie". As soon as that is done, you wake up the next day, somebody asks for your name. You are taken to a character costomizing screen and can name yourself. This also includes a size slider that effects your combat. Larger characters have more range and hit harder, smaller swing faster and have a smaller hitbox.

Technically you are playing as that character you chose. According to the Mabinogi storyline (vindictus takes place before that game) the people are finally in Erinn and they talk about Lann, Fiona and other heroes. So basically you are playing as one of the heroes that helped the people reach Erinn.
