I realised this after. Since I couldn't (or it seemed I couldn't from my attempts) knock out the undead enemies I assumed those followed the same rules. No way to rectify it at that point without restarting the whole mission though. I just repeatedly killed the fire haunt thing for the arrows and did it.

Burricks take a while to take out with enough overhead swings, i think it is 7 regular swings or 3 overhead and 1 regular, they make a heck of a noise going down as well. you need to be precise when using the blackjack on the creature as well, Burricks are easily startled.
Best thing to do with undead enemies are to side step them and not alert them unless you have no other choice. with enough undead around you won't have much of anything left after you take care of em with holy water, flash bombs and fire arrows. try conserve what you got until you need to use em.
They only require one hit from the blackjack and if you have to use the sword, just strafe left and right; they take a long time to turn around.
The noise they make actually doesn't affect anything.
There is no need to be precise. Just run up to them and knock them out.
They are no more easily startled than any other enemy. In fact they are easier to deal with than human enemies.
Furthermore you can easily run past them (on most levels, Lost City is the only exception). The ones you should do this are the ones after you get the horn and the lone one next to a rope that leads to some water arrows.
you implied in your previous message on how you should deal with the burrick and i gave my point of view, there wasn't any case for side stepping or running from them in that message so i won't be answering to that.
i found sneaking up on a burrick harder than sneaking up on a regular human, and when you can deal with a burrick with a blackjack you need to be sudden to take it out.
If you have to take it on via the sword, as mentioned before it will take a few hits and the noise made on death can easily attract other enemies in the area. other burricks for example. the clue in that is to try to avoid attacking the creature and attracting maggots to meat.
