Use of Starter/Ignition

I like my sim games as real as possible, and like the fact the engine stalls under certain conditions (unlike Assetto Corsa for example).
One thing I dont get tough.. Why is there a Ignition and starter button when the car starts restarts itself automatically, I really dislike that and hope I can turn this auto-restart option off somewhere..
Does any of you guys have a brilliant idea?
