all intro and menu's will only show in the middle screen - its not until you got to race that it will use all your display... that said - you will need to set up the display to triplescreen/resolution etc in the in-game "display settings" tab.

I run on triples - so they do support triple monitors.
been an age since I set them up - and I know they can be a bit tricky - so Im not sure where the OP's problem lies....really wish i could help as triples add something...

Go on track and turn off triple screen it go's to one, Turn triple screen back on and all 3 are on the one screen, This is in full screen and borderless.
Also everytime I change something it just locks up, Was happy to give it a go but just can't be bothered with it anymore.
I set it up to run without surround once using a custom resolution and borderless window and the performance was terrible. Just bite the bullet and use surround.
Why is surround terrible? I set mine up once and turn it on when I want to use it and turn it off when i don't. It's one checkbox and I get no issues on performance. DCS World supports triple and surround and I still use surround with it because I have to make my left most screen primary to not use surround.
You have a tool to make it work on the video card level. I wish every game on PC had the triple screen support that sim racing titles do. I'd play FPS in triple if they had the ability to adjust the camera angles for the side screens.

I am setup now that I just right click the desktop and select a profile and switch between surround triples, non surround triples, single centre monitor within a minute.
