Keep in mind, cars are very different and for some of them even Amateur mode assists are not always enough to keep your car from spinning, but there are, as well, cars that are surprisingly well driveable even in Get Real (and you can set up your car in this mode for easier handling and use built-in traction control if it's available for this car).
Unfortunately, it's impossible to predict how each car handles with keyboard, you have to try them to know for sure (test drive is free for all cars). And older cars are usually better. Yup, who could've thought.
Obviously, you don't get that in simulators like RaceRoom, Assetto Corsa, Project Cars because it'll hamper realism. But I wouldn't say RaceRoom is much harder with keyboard than AC or PC. But very limited assists options (there are only three of them: "Novice" with brake and throttle assists, "Amateur" with ABS and traction control and no car setup, "Get Real" without anything but Traction Control in some cars) do make it harder sometimes.
I understand multiplayer balancing intentions, but I don't know why they didn't provide a wider range of assist options at least in single player (at least, I don't know, an ability to set up your car with assists on?). gMotor 2 (game engine RaceRoom uses) supports plenty of them, you can see it in rFactor 2, for example (another modern gMotor 2 game).
P.S. You won't find support in what you say. Sim-racing community these days is... well, human memory is short and everyone seem to forget older days with sims like GTL, GTR2, rFactor when wheel/gamepad wasn't seen as a requirement to play. You'll be laughed at when you talk about keyboard in simulators (and sometimes even when you talk about arcades). And it's kinda ironic that modern sims remain playable with keyboard despite what community think.
