And well, once the tyres loose grip, they won't give any resistance anymore to the engine, which is why it goes full RPM. That's why you've to switch to 2nd gear asap after starting and sometimes even 3rd gear, if the tyres won't stop spinning even in 2nd.
And for an optimal start also make sure, that the tyres are hot enough, otherwise they might loose grip faster.
I used a ps4 and a ps5 controller (both work well and i pretty much use vanilla settings)
I just turn the sensitivity steering on 115 instead of 100 but thats personal preference.
