Sounds like your mind is already made up and would be a waste of time to persuade you any further. But I'll drop this blurb here anyway as food for thought about the balancing concern:
The demo felt pretty balanced to me.
This is coming from a player that died 10+ times as an astrologer with summoning ashes to Elden Ring's Margitgud, never completed Dark Souls 1 or Sekiro, and generally sucks at souls-like, parrying, and intentionally dodging.
In that, I'm a noob. But I would expect anyone that can clear a souls-like to put in the time and effort to become proficient before suggesting to the developer that the game needs to be made easier. At least, I had this impression that souls-like players were patient enough to figure things out.
You could try the full game and see if the devs patch it to your liking.
Just say "i suck at the game so i came here to make a whiny defensive post without specifically saying what i have an issue with"
For example, the heavy weapons don't have proper hyper armor and its too easy to be staggered out of a slow attack. < my gripe and actual feedback
