Can't play with PS5 controller and Windows 11
Steam detects my controller perfectly (except it doesn't let me change LED colour). Starting the game normally or through Big Picture mode, it just doesn't let me change the controller option other than 'Keyboard'. Using Windows 11 and new PC. DS4Windows strangely doesn't detect my controller neither, while W11, it does.

You dont need DS4Windows with PS5 controller. Enable controller support in steam settings and you're good to go
