The gold version should come with the first DLC already enabled, as you said, but only that one as far as I know. Anything else like camo packs or wolf skin for dog killstreak are extras, and just for the sake of accuracy, the Ripper is a weapon from the Devastation DLC, which doesn't come with gold.

To check if you have it or not, look into assault rifles/sniper rifles for the Maverick, or into extinction mode for the "Nightfall" map. The multiplayer maps are already into matchmaking lists, so they're already accessible if the DLC is activated, thus the only way to be sure if it's activated or not is to check for the weapon/game mode.
If you have both of them, it's activated and fully functional.
If you don't find them, you might want to check the game's files, just in case they didn't get downloaded (although it would be weird). Either that or contact steam support; at least, that's what I'd do.

Have you tried shutting down Steam and restarting it? Also have you verified the game cache? If you've done both things and still don't have the DLC, check to see if it is listed for the game.

To verifiy you game files: Library > {game list on right, right click on game MP] select mProperties > select Local Files tab > select Verify Integrity of Game Cache...

To check for any DLCs associated with the game that you own: same procedure as above except select DLC tab in Properties instead.

If you don't see Onslaught and Wolf Skin (both should be included with the Gold Edition) along with Festive Pack and The Watcher Patch (both were free for everyone) and possibly the Free Fall map (not sure if they ever gave it free to everyone or not).

Anyway, if you don't see it listed, contact Steam's customer support. Good luck.

Shut down Steam, go into the Steam folder and delete the "AppCache" folder, then restart Steam. When Steam restarts, it will kick off the download. That's what I had to do after verifying the game files to get the Devastation DLC to show up.

I'm on mobile and at work right now, so I can't give you a direct link unfortunately. It's fairly easy however. Look up for technical support over steam's website. You need to register a separate account for it tho...

Someone with something better than an on screen qwerty keyboard might be able to help you more than me :D

Edit: nvm, I took the time to do a quick copy paste.
click here, register a support account if you don't have one, login and file a support ticket.
