also bonfire mastery is not the thing that unlocks new character classes.
in the character selection screen, in the top right there is a padlock symbol, that is the class unlock screen.
To unlock more "classes quest" you need to advance your world tier. the objectives for these are shown when you click the question mark button in character selection.
It relatively is, depending on how well you know how to play each class. For the most part though it's fairly simple. When you select a character, it'll say how many wins that particular character has (ie. "Wins: 1).
I would recommend starting with one class, and staying with it until you beat Death with it, then move onto the next one.
Once you unlock more characters, you hit LB (on a Xbox controller, not sure what the keyboard command is), and it radials over to the next group of unlocked characters.
