They can affect some items and are mainly used to access the endgame floors
For Shadow Plane, you need to increase your integrity by being lawful, just buy stuff ad the law shop.
For Heavens and Hells you need to have either high or low morality, you will unlock new evil and good shops to increase or decrease it but there are other factor as well.
Illegal gun parts raise evil.
Buying the dice from the gambler in the tavern raises lawful.
Buying curse removal from the cleric tavern NPC raises good.
there are events and situations outside of these but they are rare so if you’re going for a morality, make that a priority on floors 1-3
Buy every item in a soul shop if possible on your very first visit to one and it won’t be a big issue if you need to find just one more. You may not use the items but it’s a helluva lot better than being locked out of a morality ending.
it gets you access to certain bosses after mega death, where you will be told explicitly what you're missing so you know what to aim for on the next run.
to increase the stat you want your best bet is to start with a character already with some in that stat, and then try to buy stuff to raise it.
without spoiling, once you beat certain bosses you unlock shops to raise stats.
