Basically, making any of these unique monsters required a hell of a lot of new code workarounds and design to make them work within the game mechanics, which was impossible for our small team. The game was primarily designed to fight other humanoids with weapons.
We tried to add as many nods to these creatures as we could throughout the game. There are hydra fangs, gorgons appear on shields, Athena's aegis, and theres a mirror shield. Griffons and other baddies abound as statues or other imagries.
If we had the manpower, time, and resources, we would've loved to have more monsters in the game, but we had to make some compromises.
I really liked this game, I hope to see more games of this unique style from you guys. Maybe not with a greek theme (a game using Celtic, Roman, or even Ancient Chinese mythology would be really interesting to see.)
