I don't think higher difficulties are in the demo, but you can unlock him by getting the gym and doing 100 of the three workouts

in order to get saitama in the new demo, you have to unlock the gym upgrade, which will make a gym appear somewhere in the tower, and then do 100 squats, 100 pushups, and 100 sit ups, do the squats first because u need 10km run which you can get by doing 10 squats, and for push ups, jump up and down to go faster
