As you "pick" your color regardless of the faction you chose the red part doesnt help but invasion mechanics are the same across all factions anyway :)

Does it dispaly the systems defense score?
It does when you mouse over the system once you started the invasion.
There is no real requirement for map type or size even tho certain ones favor specific playstyles. I d say go for normal size. Tiny means the enemy AI will run into you or out of expansion space very quickly meaning it ll come to war before you are ready. Large or huge galaxies can be problematic if you are not familiar with all mechanics yet and stagnate while the AI continues to grow and develop.
I always recommend Spiral-arm galaxies for newcomers. The reason is that the wormhole connecting your starting arm acts like a "natural barrier" to prevent incursions until the enemy AI unlocks wormhole travel. It also means you have enough time to "grab" and settle your arm of the galaxy. Overall it gives you more "time" and "breathing space" to play the game.
Better units.....uhm....better technology pretty much always trumps lower one. Numbers can be a problem but if you design your ships accordingly you wont have a problem holding off hordes of fleets with a single fleet of yours. Your tech can be the best there is....if you dont design your ships smart, you ll lose battles. RND is a factor but not a huge one. The biggest factor is always the design of your ship.
So if you have the best deflectors and the best kinetic weapons and your enemy brings lasers to the fight.....you ll have losses.
