dam i raided this gas station ,cleared it completly and no......helicopter , in the safe was the larger gen that was a plus so.....where is the chopper?

when you lose something and notice it quickly, like a boat or a heli, directly ALT F4 out of the game without saving off course, and load back in, it restores the last auto save

If you "slap" it into the water? I would assume that it would go poof.
If you land it, it hurls itself or a save point drops you into the water there's a good chance you'll be able to fly it out.

I crashed in the water first time out flying at about 150 kph, it did sustain some damage but did not break, it floated on the water and I could get it back in the air and land it on my heli platform a top my base
