If you want someone in a support class just make Ichiban a Aquanaut, but you have a lot more freedom with which class you want to use with skill inheritance.
To answer your question though (albeit a bit late), the demo should really be played *after* IW imho. I feel like is such a neat bit of Easter Eggs that'll have you going, "Ohhhhhhh so THATS why that happened!! Cool!"
The better question would be "Should I play the other Yakuza games?". Not absolutely necessary but I recommend it!
its a demo exclusive scene, alongside the tutorial fight with kiryu and ichiban which is pretty neat,
