Super Sujimon

I found that if I take a lower tier version of a character and evolve them twice, the third iteration takes 2, 3, and 5 others and then becomes a 'super'. but in all my evolving, the stats don't change much if I evolve them with level 1s. Should I be trying to train up sujimon to evolve with, does friendship impact this? Like I might get a grand total of 10 extra strength if I'm lucky across all 3 evolves. Not sure I'm doing this right.

No, it's a nice thing to have slightly more powerful versions of three-tier sujimon if you want to slowy build up the team instead of aiming for the strongest sujimon right away. But ultimately, those super versions can not compete with stronger base types (especially the kiwami ones).

Turns some of the tier 3s into the same tier as the "Suji" with the crowns. They are still below the Kiwami though.

There are 5 Sujis that have evolution into a super according to my research, here they are:

Dungeon Troll,
Ganglord
Pandoras Boxer
Executioner <can 100% confirm as I have this one in super mode.
Clawmander
Sodachi <this one is automatic due to story.

Sodachi is temporary, you have to evolve him like the rest afterwards.

the two I made were ganglord and clawmander, so those are right.
