Her response to being proposed to on the first date is very "human". Let's also not forget that it wasnt like ichiban saw Saeko weekly leading up to this. In the group meeting it was for the first time they all got together in the last 6 months...AND it's suggested that ichiban and saeko weren't meeting up, just the two of them, before the first date.
It stands to reason you could probably count on both hands how many times Ichiban saw Saeko post Y7 and before the first date.
As for no contact? I mean, far less things are described on reddit all the time and the masses say go no contact.
Saeko's "let's be friends" is girl code treating the situation like a breakup.....and in most cases that means going no contact for a good while until the other person gets themself sorted out.
Well if you're asking for a spoiler ....here it is.....yes they do reconcile and it's implied that they are now an official couple at the end of Y8, even if he can still lack common sense at times.
That's a very....odd...response. As far as projecting is concerned, it's called understanding human nature.
Edit: I thought your post was odd because how angry it sounded, but looking through your post history this seems to be continuing a trend of insults in abundance of many things and people.
She's not a teenager, that behavior is a huge red flag.

I disagree. The whole situation felt like a forced trope to me. The only time I've seen someone respond like this is in anime with highschoolers (I'm talking about the specific response not Saeko's intended goal which is understandable). It might be a cultural difference. So Ichiban acted like a middle schooler and they wrote Saeko to respond like a highschooler but they're both grown adults who should be able to talk. You can kinda excuse Ichiban for acting like a kid but it does take me out of the story a bit. The worst part is that Saeko knows Ichiban. She knows he's dense and lacks knowledge of social cues. Somehow she understands enough about Ichiban to salvage their relationship but not enough to figure out Ichiban isn't going to understand very well?
