Aah, that explain. I saw it online that there were some nodes to the south of Meteora, so I was looking around that area... Guess that's why I haven't found anything.
Funnily, after I posted that, I managed that second spot, and another one. Now I'm exploring the Dark Forest and managed to find a lot. Thanks!

It is odd that around the portals it's far easier to find everything else besides copper. As it's the first ore resource we need when getting there, you would think it would be fairly close to where we start.
My son and I did circles around the area for some time yesterday scratching our heads to why it's so hard to find. Not common in games to look further into the map for starting materials.
Pre-Update copper was readily accessible from the start but that made it way too easy. The game lures you to distant parts of the map to encourage you to go out there early game and make mistakes. Possibly dying in the porcess but further extending your understanding of the different dynamics. I would have you notice that there is just enough copper in small amounts close to crossroads. Enough to build a forge station, armorer's station and subsequently, copper nails.
If I may, I suggest you don't try to build copper or bronze armor, unless you are ready for a long trip to dark forest. Instead make just enough for tools and move on to iron and steel as soon as possible.
Nothing to understand but frustration, nothing dynamic about running into harder biomes unprepared. So we just ran in there and got the materials we needed to make the tools and crafting stations needed to skip past copper and bronze. A bit cheesy, but hey if that's how the devs want it played.
I'm sorry that you feel frustrated, you are one of the lucky ones actually. Most people don't have that close a relationship with their sons and bonding opportunities can be rare. Hardship and struggle enhances the bonding experience in my experience but I recognized going in the forest with a team can get a bit hectic.
Eventually you know which areas to avoid and you go in with lots of hare loins to boost stamina. Get what you need and leave, that may have been the intention of the devs until later game. To be fare, they put a large copper vein right at the edge of the mountains and the forest, lots of dark trees there too so you don't even need to go far, you're just encouraged to peek in there.
I hope you're still having fun, this game has great potential.
