How to Revert Update

Hello,
I had a save that was about to reach the lategame that I would love to continue - unfortunately steam auto-updates were turned on and thus I'm now on the latest version without any way to revert back. When checking the beta tab for steam, the only option I have is for updating to the beta patch. Is there any other way that I could revert the update?

Its kind of crazy that they pushed an update which completely broke every single save and mod but have no way to opt in to the previous version. It should be an option like opting into the betas in the first place as most other games do.
