At least that is my personal experience, like have quite a few early access game that looked promising and enjoy playing for what content they had, but really few that I actually paid much attention to after longer periods between updates or patches. Imagine its that way for many if I were to guess, think with a demo if its fun it gives something to look forward to even if you know its going to be a while before it releases.

Please no Early Access :-( It feels like all games are only released in Early Access and I would finally like to play a game that is finished. Early Access may have some advantages for the developers, but for those who are not passionate test players, Early Access is torture.
Better take your time and finish developing the game. I'd love to play Bloody Hell Hotel yesterday rather than today, but I'd rather wait and play a full version at release without having Early Access in the back of my mind.
