Magick archer and Thief with the right weapons and skills can melt through a dragon as early as lvl 30. Even if you don't have the right weapon, find or use a mage that buffs your weapons with ice attacks and it does become significantly easier.
Around your level if you find sorcs with the meteron (master) ability, on a sufficently equiped and staff enhanced ones, that skill if all four meteors hit the dragon, it'll remove three of its health bars. That's a fairly big if, because the casting time is long and the dragon does like to move about if you or one of your pawns is kiting it around.
If they're still really giving you trouble by the time you are in the 40s and 50s, just get the magick archer's ultimate ability and fully charge it then let it rip, just make sure the dragon doesn't hit you as you are charging it as you will lose your health for nothing!
Personally by the time I was 30-40 I was able to take them down but usually with most of my pawns close to losing much of their health bar that the really needed a inn or camp rest after the fight. By the time I was 50 I was no longer running away from dragons but actively hunting them for wrymcrystals.
Oh and if you didn't already know, hit it's head and heart, it takes more damage to the heart than the head.
While the magick archer advice above is mostly accurate.... I sure hadn't unlocked magick archer anywhere near the time I was at level 30, and I was probably in my late 40's by the time I did. Unless you are following a guide you probably don't have that vocation yet.
Again just focus on having a balanced party, maybe bring a sorcerer, make sure everyone has decent gear for where you are, and like said above try to bring ice enchanted weapons or spells.
However that aside, Main playing a Sorc is perhaps the best way to go dealing with dragons early on. Just cast Augural flare on the Dragons heart and keep hitting it yourself, ideally If you have a thief pawn using the skull splitter skill on the heart, when the flare explodes, it'll one shot kill the dragon! Pawn sorcs are not particular good at placing Augural flare on a dragon's heart
