what do actually happen when an arisen fail on defeat the dragon?
since there are a lot of arisen around the world that failed the mission , what happen when these fail? do the dragon dissapear for a long time until a new arisen appear of what?
can a failed arisen still fight the dragon?

I think it used to be that they became lesser dragons like drakes, wyverns, and wyrms.

If the dragon kills them. the dragon in the first game is an arisen who failed to become the seneschal. If I remember right minor dragons are arisen who challenged and failed to kill the dragon. Their purpose is to ensure the next arisen is more powerful by preparing them for the dragon.

There's also an arisen in Bitterblack Isle who gave up on killing the dragon for his own goals but since he's removed from his own universe he's a special case.

Ashe didnt give up, was just super pissed at the offer he was given. Kill the dragon "who was the arisen he looked up to that failed to kill the Seneschal , or kill his loved one. So he cursed it all and wished to get rid of the cycle which in turn made BBI pocket world where he lured and killed countless Arisen to try and slow/stop the cycle.

"Arisen who fall before facing the Seneschal are thought to be transformed into lesser Dragons such as Drakes, Wyrms, or Wyverns. Some Dragons appear to have retained memories of their former lives."

Here's the old wiki page. I remember there being more on it but it wasn't really fleshed out. It was likely part of the cut content but replacing Grigori is one of the three endings.

It's why they can communicate with the Arisen and control pawns.

If arisen quits before facing "Grigori" dragon they become former arisen like Sigurd, Luz and Lamond are, and the next arisen gets picked by the same dragon

If they kill the "Grigori" dragon but then fail to kill "Patfinder" dragon they become the next "Grigori" and get to pick the next arisen

If they kill both "Grigori" and "Pathfinder", arisen becomes the next "Pathfinder" and gets to make another "Grigori" to serve as a punching bag

Well for one, the Arisen dies before meeting the Dragon they are turned into a drake and people seems to forget them or sees them as false arisens.

Those who fail, to defeat the Dragon in battle are turned Dragonforged, they are injured in some way trying to slay the dragon that they can't continue the fight, and they just lose their powers. This happened with the Original Dragonforged and is likely why Lamond stays at the Healing springs.

Those who takes the dragon's deal, get considered winners and depending on what they wish for, it becomes granted. For Edmund it was ruling as a Duke, for Ashe it was his hatred, and wished for the power to destroy the the endless ring and the world, thus he was given power and turned into Daimon.

If the bad ending has anything to go by, it seems the Scene Mimics the Scene the Coronation. This means that Darragh could infact be an actual Arisen but made a choice which leads him to being considered coward.

but if the arisen fails , ''grigori'' leaves for a while. Or that it what it seems to be on DD1, since there are already failed arisens around the world when grigori open the portal. So what would be the difference on winning or lose the fight for the rest of the mortals? since the cycle keep going anyways.

Seems like a huge super waste of time to me.. Better off just being immortal and living a normal life.

It seems you only played the second Dark Souls. Go play the first and third game to truly understand what they're going through.
