What mods would you recommend, will my pawn be shadowbanned? Thats the only mechanic that is useful and funny here - I would prefer not to lose it...
Your pawn won't be shadowbanned, unless you do 1 of 3 things. Your pawn's base stats exceed naturally gained parameters, or your pawn is equipped with gear that its class can't normally use, or gear with artificial stats. Or, modding to make a pawn an elite class like magic archer. As long as you don't do stuff like this, you won't get banned.
There's a shop mod that lets you buy port crystals and ferrystones from the shops for 1g. There's another mod that removes the port crystal cap from 10-255. You can literally port crystal every camp and settlement in the game if you want. There's a mod that's already done that, there's a mod that allows you to move a port crystal map icon to anywhere else on the map, etc. Among other stuff.
I modded the hell out of my game, and my pawn isn't shadow banned, I logged in earlier and over 40 people used it since last night.
-> Alter your pawn's attributes
-> Alter your pawn's maximum carry weight beyond the total of +12 permanent weight bonus
-> Grants your pawn equipment they are not allowed to wear on that vocation
-> Total conversion / rabalance mods
Anything else is fine and can be used freely. I have been using better levitate for movement with +20 speed and 10 min max duration, I use the mod to see all seeker tokens, I use the mod for more jump height and I don't need much else since the game is easy enough.
There is a mod to increase difficulty by applying beefy health and damage boni to enemies. I plan on using that NG+

Have you found a mod that allows you to freeze level gains for both the pawn and the arisen? Or set a custom level cap? The game would be a little more challenging if the level cap was 30. Also, 30 cap for pawns would mean they get hired more.
That's perfectly safe. Even giving your pawn massively OP weapons at early levels is safe.
There doesn't even appear to be a stamina cost penalty for using the said gear like there was in DD1.
I'm talking ♥♥♥♥♥♥♥ goblins here, which were melted by a single fire attack in DD1. Then we have the lizards, which are ♥♥♥♥♥♥♥ stupid because, again, 3 hit combo to take away more than half of your life, and then they jump on you and pin you tot he ground. Like, I CAN'T EVEN OUTRUN THE ♥♥♥♥♥♥♥ ENEMIES WHEN I'M LOW WEIGHT, WHAT AM I SUPPOSED TO DO?
A pack of wolves will start attacking me from each side, timing their ♥♥♥♥♥♥♥ atacks to, once again, give me a 3 hit combo. This is stupid, completely unfair, and it seems to be made for you to pick a melee attack class, like fighter or warrior.
Oh, and don't get me started on the fact the enemies won't attack each other. Group of 3-4 bandits and a pack of 2-3 lizards? They've been friends for their whole life and won't hit each other at all. Like what the ♥♥♥♥ is this?
Have you tried the Thief augment Subtlety?
Reduces chances enemies target you in fights
Also make sure your pawns include 1 fighter with shield drum
As for the last part of your post, it's not true. Enemies of different variety fight with each other all the time. But they won't if you rush in and break up their fight, presenting the highest level threat. That's when they get to you.
