I also recommend wearing the petrify immunity ring.
Preserved being the best - and requiring less than 1 or 2 health-bars to be removed during the decapitation attempt. For memes - I also tried brandishing the head and petrified a medusa as she was attempting the same on me (had the ring) and it doesn't seem to recoup the head or anything (figured it was worth checking out).
Also - fun fact is that Magic Archer has a skill for items to degrade slower. I don't know the exact rate, but it allowed me to petrify the Griffin, Medusa, and wield it a little while staying "preserved" until post-game where it auto-decays.
Of course, you can also use the Magic Archer to put the Gryphon to sleep until the sculptor says he has enough sketches.
