Mercedes?
So what happened to her, why they didn't put her in the story? It was a great side quest in the first one. I thought they expanded on the first game with this remake, so why'd they cut her out?
Also, why change the name of Gran Soren to Vernworth??

Because this one takes place in a parallel world.

This game takes place a unspecified, but likely very long time after the first one. So she's dead.

Oh okay, I guess that makes more sense then.

After the Dragon's defeat, she returned to her village, there Mercedes found herself grappling with a profound sense of emptiness. The adrenaline-fueled battles had left her yearning for purpose beyond the confines of her once peaceful life. Determined to make sense of her newfound strength and the lessons learned on her journey, Mercedes began training the village's youth in combat, passing on her hard-earned skills and wisdom.

As time passed, Mercedes emerged as a respected mentor, guiding generations of warriors with her unwavering resolve and compassionate heart. Though her days of traveling with the Arisen were behind her, Mercedes found fulfillment in nurturing the next generation of heroes, ensuring that they too would be prepared to face the challenges that lay ahead in a world forever touched by the echoes of dragons.

This game is either in a world parallel to the original, but also so far into the future that the land's original name is lost to time.
