only buy if you want to support the devs. other than that, really no reason whatsoever
You essentially buy power with the deluxe edition, power that will be relevant for the first, max 3-5 hours of gameplay
For all of the different items, reading the Deluxe Edition article on the store page generally helps

I would also wait, until they added the "new game" function and optimized performance. And hopefully do something regarding the save system...
I didn't buy it for any of the benefits, they're all pretty forgetable. The only convenience thing I got is the necklace that can be gifted to a NPC to max affinity right away, so you can do it to an elf to get elf language in 1 go.
I got it because I love Dragon's Dogma and wanted to support the second release in the hopes they release a Bitterblack Island for it or a third game if its successful.
And so far I haven't regretted it since at least for me the game has been a 10/10. Everything I hoped for and waited for in the past 10 years.
That said, don't get the deluxe edition. If you're going to buy the game, buy standard. See if the game even works on your machine because I've had no performance issues but that isn't the same story for everyone. And even if you feel as strongly about this game as I do you already are paying full price for a AAA game, you don't need to spend more unless you're trying to play the long game like I am, which might not pay off at all.

Wakestone - you'll be swimming in them soon enough (kinda like in DD1, where you start swimming in them). Though out of all items, this is definitely the most useful (but by the time this'll 'really' matter, you already have a bunch).
Art of Metamorphosis - One of the few things you can actually buy with RC... RC is almost useless this time around (not that i was very useful in DD1, just... A lot more useful).
Harpysnare SMoke Beacons - You get a few for free from chests, usually around locations where they're relevant. NPC in the first town sells them for 3k a pop.
Ambivalent Rift incense - Unlike DD1, pawn inclinations do not change outside of using an item for it, thus there's no need to maintain it, so this is only really usefull if\when you 'really' need to change the inclination\personality. However, as above, one of the few items buyable with RC, and you'll be swimming in RC soon enough (especially with a certain agument that increases RC gain from pickup)...
Makeshift Gaol Key - Not only are they sold by a few NPCs. You actually can get a permanent one that last indefinitely... Literally useless.
Heartfelt Pendant - Think this one is actually unique item (at least, I haven't seen it). There's a similar item in-game that is earnable (and takes forever). All it does is max affinity, It's best usage is to give it to a shop-keeper for the 10% discount (max affinity), however if you gift them a top-tier item of their favorite, you'll get there within 4 or so giftings, so it's not that useful.
Explorer's camping kit - It's a great camping kit (one of the better ones, not the best), but as above, can be bought pretty close to start of the game, so it's not worth 'paying' for.
1500 Rift Crystals - RC is 'mostly' useless, as stated.
