You mostly buy the better equipment in Dragon's Dogma, then you enhance it at the same stores.
As you progress, you see the better items in the stores and you buy upgrades.
You do get some pieces sometimes from various quests or things, but I've found they are often for other classes. I put those in the Inn Storage.
i say, buy equipment only when the game gets too hard. If you are clearing content at a good pace for where you are save your money. If its getting a bit tough, then upgrade or buy new gear.
I exempt my pawn from this as I buy them the best of everything so they are better able to perform for rentals. Pawns with crap gear usually do no get rented.
I used to run around in a massive Armor, but then I came across a mechant that sold me a far superior armor set.

There is no reason to min/max the game. You get plenty of gold exactly for the purpose of buying equipment. There aren't that many pieces to buy anyway: chest, pants and sword/shield/staff and they will last you for hours.
