Will do, so far 2 hours of playtime without a crash - And to be as vague as possible to reduce any spoilers: I've only been exploring the starting area. My menus remain entirely stable that's 100% sure now, I've been inventory managing every 5 minutes.
Still isn't crashing as of yet.

Ah, for some reason my config file never swaps it back to DirectX12.
You can right-click the config file, open its properties, and set it to read-only. That way the game can't change it back (it won't crash, don't worry).
But the downside to that is that if you change any options in-game it will only apply for that session and be reset if you restart the game. You can always remove and readd the read-only tag again though. You can even do that while the game is running if you are able to TAB out.
Also: I've read online that you can also enable DX11 mode by adding -dx11 to the startup options (the same way you add -USEALLAVAILABLECORES in my post above) but I cannot personally confirm that this works!

1. Launch DD2 As an Administrator
2. Run the Game in Compatibility Mode
3. Verify Dragon’s Dogma 2 File Integrity
4. Set the Game as a Firewall Exception
5. Stop the “Overlay” Feature in Steam
6. Reinstall Dragon’s Dogma 2 Cleanly
7. Set the Windows Defender to “Off”
8. Update Visual C++ Redistributables
9. Set Windows to “High Performance”
10. Close Background Windows Tasks

This shouldn't be surprising, though, seeing as you had to do something similar in DDDA to make it playable on PC.
