However, with a good setup you can literally one-shot dragons.
Prescient/Augural Flare does ridiculous damage. Spellhold and cast it when you see openings. Build it with regular attacks as well. The targeting is really finnicky so be aware.
-Tips-
Maximum Stamina is important.
Highly recommend grabbing Endurance from Archer.
Spellhold is more useful than you think.
The Elven Town has good rings and gear for Sorc/Mage so pick those up. A single ring that speeds up casts is a big difference.
Honestly I'm not a big fan of Sorc in this game. The core skills suck a lot so I'm using Warfarer.
Not having access to Maister Sorc skills barely impacts your Warfarer Sorc I take it?
Spell hold + any of the maister spells will kill most of the things too but the gameplay can get stale really fast.
Sorc really got hurt by removal of 2 extra skill slots but still can 1 shot bosses if everything goes well and you have high enough magick.
If you want to play incredibly op vocation just hop on magick archer, kills bosses instantly with martyr bolt. and most of its normal skills are completly imballanced too.

The amount of times I died on sorc to mobs was less than the times I died to gravity. I quit playing sorc because it was genuinely boring when Im standing here nuking half the planet.
Really, nothing even kind of stood a chance.
Warfarer gets all the core skills of w/e weapon it's using at the time and yes it barely matters for Sorc. Only useful core skill is Quickspell.
Btw it takes up one skill slot to swap weapons on Warfarer meaning you not only get lower stats but lose one skill slot if you wanna use multiple weapons.
Even with that Sorc/M.Arch obliterates basically every enemy.
Also i had to revisit this again because the point you were trying to make was just so... Misguided.
Nothing in the game is going to make it so you aren't targeted. You are supposed to be facing adversity. Why are you even playing a game if you don't want to participate in it? Go watch a movie. ♥♥♥♥ man.
