Holding L1 allows you to 'knock' and prepare skills without aiming. The auto aim kicks in and will do it's best to hit what you're facing.
Holding R1 puts you into manual aim where you can prepare your skills and hold them while aiming.
It can be a little rough if you get stuck in one of your charge skills since you can't move quickly if you're knelt down and aiming. It kept me more diligent on watching my opponents. If they started to get too close I'd start kiting until my pawns took the attention again.
Also, quick tip. It also uses your controllers gyroscope. If you set yourself up with R1 to aim and you have a gyroscope the aim will use it unless you use the right thumbstick. The thumbstick has priority over the gyroscope but if you happen, for example, to be aiming and let the thumbstick go before firing the gyroscope may pick up any physical movement and bump your aim.

Skill issue
Like, the bow being harder to aim is fine, I just hate having to press the skill buttons repeatedly and let go of the aiming button to loose my arrows rather than just pressing a shoulder button.
They had a perfectly fine system in the first game, and for some reason completely threw it out and replaced it with this.
I've also had little to no issues with it. It took me an embarrassingly long amount of my play time to figure out that you could quick knock your skills with L1 but once I found out it I was able to rapid fire with ease.
Not sure if you're aware, apologies if you are but you are able to loose the skills without letting go of your aim. If you hit the same skill button of the skill you loaded a second time it will loose the skill the same as if you let go of aim.

I swapped my bumpers and triggers so I shoot with Right trigger 🤣 that probably helps a lot if people are trying to play with bumper skills nah haha
