What is the gaol key for?

if you get caught trespassing in vermond, like going inside of the castle at night, you'd get thrown in prison/gaol. it allows you to just walk out by using the key on the door and sneaking outside.

You can also get them in the game too outside of that deluxe edition.

You can buy them infinitely in Merve they respawn after a while.
