You'll need to do it one at a time, tear one wing, and then the other.
They'll still be able to fly and do attacks from the air, however when I fought my fourth Drake, and the other three flew away, when I tore the wings on the fourth, it never flew off and I was able to kill it.
I haven't faced any griffon or dragons yet so i don't really know.
But did you shot the wings ? is it working ?

You follow it but the best way to keep it from flying off is to actually do enough damage to knock it over in the first place so it doesn't get the inkling to just "leave." I've never had a dragon fly off that I've constantly knocked over through raw DPS. Archers are great at stumbling enemies but you need an upgraded bow for more knockback power.
