What is Tarring?
I have a ring that prevents tarring from accumulating but it doesn't define tarring.

You can get weapons that apply a kind of oil or tar effect to enemies which then makes them easier to catch fire. It's this.

Tarring is a debuff you get where an enemy throws or casts something on you that resembles "grease". When you have it happen to you for the first time you'll unlock the entry about it in the History section of the menu.

Basically when you're tarred if you take fire damage you'll burn. The earliest I had it happen to me was with goblins. Sometimes the ranged ones will toss a little pot at you and if it hits you; you'll have a chance to get tarred.

Okay, that makes sense. I've had oil thrown on me a couple times but I didn't know that's what tarring is. Seems like a waste of a ring slot just to prevent it.

Unless there is an area or creature type in an area that could possibly do this a lot and then light you on fire, I have to agree with you. I have seen a poison variant of a creature and it visibly indicates that they will poison you. So if there was an anti poison ring then that would be helpful.

it is indeed a waste of a ring slot because you can make a *tarring potion* that gets rid of tarring from cinnamon bark found just walking around. Look for trees with a bulging trunk with red spot. Don't sacrifice your ring slot :)
