The only notable bugs in vanilla are connected to faction wars and repeatable random quests that have no significance (because the quests are repeatable and will come back on again).
Actually its the Complete mod that introduces some more serious bugs for some people, the irony.
I suggest trying vanilla first. If your PC cannot handle it and you get crashes, or if you find it too hardcore, then try Complete, it mellows the game quite a bit and the hardware requirements are lower too.
Anyway, I play vanilla with Absolute Nature 2 and Absolute Structures 2. If I'm feeling like doing a playthrough where i want to particpate in the faction wars, I use Complete Mod. The Complete mod fixed quite a few things in the Faction Wars. I actually enjoy playing them.

Do not get Complete. It is overrated and outdated. If you want a easier game there are some optional mods with SRP you can use as well.
