Do I need the unlimited ammo weapons such as unlimited knife, rocket launcher etc. as well for this achievement? Or just the normal guns?

You need to have purchased all weapons

Just got this achievement yesterday and I can tell you that the unlocked weapons do count towards this achievement.

Yup, even the infinite rocket launcher.

So what I understand is, every single weapon in the game, which makes it the hardest achievement in the game. Since for infinite magnum I need a new game professional completion (no NG+ and without using infinite weapons), and for the Chicago Sweeper I need an A rank on professional. Also Primal Knife by destroying all 16 Clockwork Castellans, and infinite rocket launcher for 2 million pesetas. Four Infinite weapons overall.
