One thing i've learned about that fight is :
You can 100% melee him if you have good reflex.
About that grab, there's 2 way to deal with that.
First is : be quick. If you see him move his 'big' hand backward, he will grab you, so quickly run away from him. One thing i noticed is, he always protected himself before he do that, but maybe it's just luck.
Second, the most safe : always stay at a distance, and let him come to you. He will always do a dash attack, then one or two more strike. Attack him and then back off again.
That's how it ended up: me keeping him at a distance and baiting him. Where I ran into the most trouble with that was not being able to tell if he was going to do the charge where you parry or the one where you evade. As far as I could tell both charges happen similar but maybe I was missing something. It's true though that with every successful counter, he's mostly always staggered for a melee. I think if I knew ahead of time that the melees were the fastest way to get his health down, I would have been a bit more patient.
The Krauser knife fight was amazing. It was all parries and quick turn and pokes. I would pay to knife-fight Krauser in other locations of the game.
I'm on this now. This is so much better than Gamecube. So much better. That said, his voice... It's ♥♥♥♥♥♥♥ terrible. It reminds me of the early 1990 military spoof movies where everyone talks in a strained "hardcore" voice.
I am trying to conjure the best years of my Dark Souls experience so I can save my ears.

But that's what he is.
