There are 3 main chapters in the Resident Evil Story.
RE0, RE1, RE2, RE3 belong to the T-Virus chapter (Zombies)
RE4, RE5, and RE6(partly) belong to the Plaga chapter
RE7 and RE:Village belong to the Mold chapter
You'd better start with RE1 to get an idea how everything started.
If you want to catch up on Leon's story, go with 2 Remake. You could try the originals too, they're pretty different experiences and both are worth playing. Tank controls and fixed camera angles can take adjusting for new players, though, keep that in mind.
3 doesn't have anything with Leon, but it shows Jill's perspective of the Raccoon City incident and puts an end to it. If you want to go through the entire incident in general, go 1-2-3.
In 1's case, both the original and the remake use the old tank control/fixed camera style, but the remake has an analog controls option if you just can't get used to tank controls.
RE 1-3 : Slower gameplay, more darkness, city
RE 4-6 : More action, more enemies, different medieval locations
RE 7-8(9?) : First person, slower gameplay but still action
Even main games are pretty confusing, while there are also more and more spin offs.
So yeah, I might start with 7 or 2 remake, gonna see
It also seems that each game tells other character perspective.
RE 2,4,6 is Leon trilogy
RE 7,8 is Ethan story, etc
all the other games feel like complete different games entirely its more about resouce management and the entirety of enemies you kill in the other games are probably what you down in the first 2-3 chapters in this game
