I tried moving the boat and hitting it in the mouth and neither seemed to work.
There's also an animation leading up to the jump attack (does it do a little dive maybe?). You can recognize it and already start moving to the side.
From what I remember, depending on which way the camera is panning is usually the biggest tell from which direction the jump is coming (left or right side of your boat). So you are meant to use A or D respectively along with the above information to chose the best path to avoid the attack. If you picked the wrong direction you will probably get hit.
Also try to memorize its patterns and be prepared to dodge its jump attack and random debris, When Del Lago submerges, be ready to doge and attack once you are safe.
Once you get the hang of it, you can dodge it most of the time.
