Red (R) ones can't be eaten individually, you have to combine it with a G or G+Y, which in turn heals to your max HP (same as a first aid spray)
Yellow (Y) ones also can't be eaten individually, you have to combine it with a a G or G+R, this one increases you max hp bar, (max allowed HP is about 3/4th of the circle)
I'd usually never make a G+Y+R, unless i'm lacking inventory space. at the start i'm more inclined to just suck on G+Y's whenever i'm low, just to increase max hp and save / mix red herbs later.
You get a use prompt on R+Y combos now. I didn't try it to see if it will let you ( seriously why the ♥♥♥♥ would you ) but it appears we might now be able to use them that way.

I believe it does actually say it in it's description...
G+R+Y is basically the same as a G+R, except it also heals you to full. My problem is you usually want to be keeping the G+R mixture for when you are on death's door. (when an attack brings you to 0 HP but you still live, but the next attack kills you) Which makes you hold out on using those, Making you postpone out on the Y herb HP increase value which you'd get by simply sucking G+Y (greens are quite common)
I would only consider prioritizing G+R+Y IF it makes you gain MORE permanent HP than G+Y.
That's interesting
I'll give it a go on my next run.
