On Standard I just spammed harpoons as fast as I could throw them and won without really learning any of his moves/patterns.
During second phase you dodge fire arrows that has only 2 patterns.
Honestly ogre was way harder due to small arena.

I wish he was a bit harder actually. Mendez's visual design is INCREDIBLE. I wouldn't mind being stuck on that boss for an hour or something because he looks/moves in such cool ways.

When it approaches, throwing a spear into its mouth stops the attack. If that doesn't work, something is wrong.
It's the times when he dives and resurfaces to chomp you that is random, I've had him literally surface 2 meters next to my boat and force me to do the QTE (this will eat your HP REALLY fast on professional) before I could even lob a harpoon up his mug.
For the rest just steer with him, if he goes left, steer left, etc. Just steer to the opposite side if you see an obstacle on his left side when he's steering left, and visa versa. You'll usually dodge his 180° jump chomp that way.
