Does that mean the unbreakable knife, Chicago typewriter, and infinite rocket launcher? Or do the pre-order weapons count as well?

You have to do a completely new game. No carry over weapons or infinite ammo guns which includes knife.

Well that I get, I did a completely new game. I just wanted to know if pre-order stuff that is available from the very start counts

Pre order weapons are not bonus weapons, they shouldn't count. It only counts weapons gained from unlocking them from the extra shop.

Infinite Launcher is not from extra shop. is it still bonus weapon?

It is, but also doesn't matter as it's only available to attain in NG+ and this challenge is for NG only.
