Someone drew her as a Mouse, and people thought it was cute. It caught on with Artists on twitter and next thing you know many people started drawing her as a Mouse.

Hell, even I'm doing it now.

She was noted, at least in the original game for having large ears which could be a contributor.

Does she ever comment about the Rats in the game by chance?
