1 shot kill with basic rocket launcher, and its the end of the game so theres no downside to just selling what you need too to buy one

i beat him legit the first time on hardcore just for the experience, but i can't imagine myself ever fighting him again in any future runs

For Professional, I used the rocket for Krauser because redoing his whole parkour is a chore. Saddler is not too bad. I actually bought a second launcher for him just in case I got fed up but I did not have to use it.

i assume you can use a launcher on both if you saved enough money no? or is that unfeasible in a speedrun?

Yes, I bought two rocket launchers in the same game (I just never used the 2nd). It was a NG+ so by the end I had nothing else to spend my money on. Not sure if things are different in a brand new playthrough.
