Otherwise just shoot their legs off to slow them if you dont want to kill them.
When you get to the spikey ones, snipe the two inside of them, then they will generate a 3rd that is always in the head, no just head shot them with a regular gun..
Shotgun their leg knocks them down. Once they are down as long as you don't stand there in front of them they have issues turning and hitting you. You can even stand behind them (ex in the freezer waiting on the card to finish updating) and they can't hit you so you can break their legs and just not fight them.
Another option is to disable their leg and while they are weaker and less mobile THEN shoot them.
The rifles are the best options due to penetration stat. If you have the combat rifle upgraded sufficiently you can use it as the best anti-regenerator weapon but there is a special trick required. It does not penetrate correctly while they are standing unlike the other rifles either due to a bug or weird design. However, once you knock them down by breaking their legs (like 1-shotgun round to the leg) then you can shoot them while they are down and the combat rifle kills them in under 1s of firing (so usually 1-2 bullets or so). Further, you can sell your weapon for almost all of your money back so sell your main rifle (bolt action / stingray, upgrade combat rifle) use it until you are past regenerators then sell it and rebuy from merchant (buyback section of the buy tab) your old bolt action/stingray and reinvest upgrades for almost no loss of money as an effective way to kill them.
The only benefit of killing them over running is you get some gems, otherwise just break their leg and avoid them.
