Killing Emmet Dalton
I've been doing pretty well with "Gunslinger" until I come to the point in "They Call Me Bounty Hunter" where I have to deal with Emmet Dalton. Even hitting him with 10 Head shots with the rifle, he just won't go down.

Is there some technique or trick to drop him?

I beat him on hard and found no real trick. I just made sure to keep him at medium range so the shotgun wasn't as effective, kept behind cover, and unloaded all I had on his face constantly. Took me five or so tries.
I threw dynamite slightly ahead of the cover I was using when he got close to give me time to run to cover across the graveyard another tombstone. You're talking about that guy in the graveyard or whatever with the shotgun right? I also used concentration mode to unload on his face when he was far to medium range away.

It takes about two full pistols and ten shots from the rifle in the head. Use your Concentration. Dodge the buckshot.

Shot at head - run next to behind rock then crouch reload and repeat...

In true story he got 23 gunshot wounds that why he is tough :)

I found circle-strafing at medium range to be a perfectly viable method of defeating him very quickly.

...so the difficulty of your enemies is just that they take more hits (seemingly to the head)? I love westerns, there are too few old west games IMO. But this just seems like it would break the immersion as it is following the modern shooter where inexplicably, human bosses possess substantially more hp than other humans and their skin is magically thicker (like a superhero or X-Men character).

I WANT to buy the game...but am concerned that I'll be too reminded of how almost all sci-fi/fantasy combat games work, thus ruining the immersion.

Instead of "magically thick skin (armor skin) + uber hp" it seems more realistic to increase the opponent's/target's speed, gun control, and aim.

@Alonion: At least on normal, almost all enemies die from a single headshot. The bosses don't, unless you duel them in which case they do. That's kind of weird, but it's just a few rare boss fights.

But I agree. It annoys me in a lot of games how increasing the difficulty just means making enemies so tough it's just not believable anymore. Increased difficulty could could from increased enemy numbers or more aggressive tactics on their part, but this is much more difficult to implement, and thus they normally just scale up enemy health and damage.

But it's really not bad in Gunslinger at all. There are some "tought" regular enemies, but on normal they still die form a headshot or a shotgun blast a point-blank range.
