because game's architecture and engine don't support any outside modifications. do not forget it isn't PC-game, it was Xbox game for years until it was ported on PC. so lack of modding is expected =/
You can make texture mods for Castle Crashers via a 3d party yool called TexMod (and various have been made).
You can also mess with the game's inner workings with Cheat Engine and sort of "mod" the game like that. For example: https://youtu.be/NB1L-zq4aUE
Also a real mod you can make is for the game's sound and music, because they are stored openly in the game files in a readable format, so you can just replace them with something else you like. A lot of sound mods have been made already too.
